Cooking With a Crock Pot

A great way to eat healthy AND save money as a truck driver is to make your meals in a crock pot. It takes very little prep, and your meal will cook as you drive. You can place the pot on the floor and put straps over the lid to secure it in place. You can also use crock pot cooking baggies inside the pot for an extra easy clean-up! Use pre-chopped veggies to save time. You can find a great selection of recipes online, so check them out! Below is a recipe for chicken and sweet potatoes:

Ingredients:
2 sweet potatoes, diced 1/4 in thick (4 cups)
3/4 c. diced onion
1/2 tsp smoked paprika or cumin, divided
Freshly ground black pepper/salt
1 1/4 c reduced-sodium chicken broth
1 1/2 lbs bone-in chicken things (skin removed)

Directions:
Combine first 4 ingredients in slow cooker. Slowly pour chicken broth over. Season chicken with 1/4 tsp paprika and salt/pepper. Nestle the chicken into sweet potatoes. Cover and cook 3 1/2 hours, until chicken is cooked through.
